The Venues

Bar Totti's is home to Mike Eggert’s menu of simple, delicious Italian food. There are plenty of house-made antipasti to choose from, including sardines, kingfish crudo, marinated peppers and burrata, and grilled snacks like king prawns with chilli and fennel and haloumi with beetroot, oregano and lemon, as well as Totti’s signature bread, wood-fired to order.

Coogee Pavilion, or as the locals call it, ‘The Pav’ opens the ground floor for family get-togethers and casual meals. The menu itself has been created with seaside dining in mind; from sashimi and freshly shucked oysters, to family friendly burgers, wood-fired pizzas and kids’ meals. The middle floor is home to mimi’s, our fine dining restaurant with a Mediterranean soul, will’s, a cocktail bar with a view, and Una Mas, serving flavourful tapas fresh off the plancha. While upstairs Rooftop has four indoor and outdoor bars and a huge wrap-around balcony with the best sea views around.

The Role 

This is a great opportunity in Sydney for quality and talented Pastry Chefs to join the team on a full-time basis, as a Pastry Chef at Merivale, you will need the following experience and attributes: 

  • 2+ years relevant experience in the industry.   
  • Knowledge around preparing pastry products including doughs, pastry fillings, cakes, buns, biscuits, and bread. 
  • An understanding of baking, shaping and decorating pastry and bread products. 
  • Worked in a quality restaurant, patisserie, cafe or hotel.  
  • Experience operating large machines including mixers, ovens, dough forming machines.  
  • An understanding of HACCP, hygiene practices and following WH&S. 
  • Can follow a recipe and accurately weigh ingredients. 
  • Good communication skills, attitude and be a team player.
