Want to work in a kitchen that's serious about quality, tradition, and getting better every day? We're looking for a skilled Chef de Partie to join our team at one of Sydney's most respected Italian seafood restaurants.

THE OPPORTUNITY

After nearly 40 years of serving our community, we're entering an exciting new chapter. We're building a kitchen team that values craftsmanship, consistency, and teamwork. As Chef de Partie, you'll work alongside our Head Chef and a tight-knit brigade of 4-5, mastering Italian seafood cookery in a high-volume environment that regularly seats 200 guests.

WHAT YOU'LL DO

  • Run your section with confidence during busy dinner services
  • Execute our Italian seafood menu to the highest standards
  • Maintain consistency in taste, presentation, and timing
  • Support kitchen prep and mise en place to ensure service readiness
  • Work collaboratively with the brigade to deliver seamless service
  • Maintain cleanliness, food safety, and hygiene standards across your section
  • Contribute ideas and take ownership of your station's success
  • Report directly to Head chef
  • Prospects to become 2IC to head chef

WHAT YOU BRING

  • Proven experience as a Chef de Partie or strong Demi Chef De Partie ready to step up
  • Solid foundation in Italian cuisine and/or seafood cookery (or genuine eagerness to learn)
  • Equivalent qualification
  • Ability to work cleanly, efficiently, and consistently under pressure
  • Strong knife skills and understanding of classical techniques
  • Availability to work weekend nights (dinner service only)
  • Team player mentality with a positive attitude
  • Commitment to quality and attention to detail
  • Current food safety certification (or willing to obtain)
  • Ability to work independently in absence of head chef (service mes en plas)
  • Ability to identify prep and/or service needs in line with menu requirements.

WORKING RIGHTS

  • Must reside in Australia, preferably Sydney. If not have the ability to relocate to Sydney
  • Must have approved for fulltime working rights in Australia
  • If you require sponsorship, whilst this is a potential option, must have greater than 3 months allowance to ensure you meet probationary period criteria - This will only occur if you are in country and already residing in Sydney.
  • Preferred to have permanent working rights or citizenship
  • Must have valid Tax File Number (TFN)
