SUSHI CHEF FOR PREMIUM WATERFRONT RESTAURANT

We are seeking a highly skilled and passionate Chef to join our premium, high-end restaurant team. This role requires expertise across the full spectrum of authentic Japanese cuisine, with a minimum of 6 years' experience in a fine-dining or premium restaurant environment.

We are looking for a reliable and dedicated team player looking to take the next step in their hospitality career at the leading hospitality venue in the Lake Macquarie region.

SKILLS & EXPERTISE REQUIRED

  • Sushi & Sashimi – advanced knife skills, fish butchery & presentation
  • Robata & Grill – mastery of charcoal grilling, skewers, premium meats & seafood
  • Tempura – precise batter preparation, frying technique & lightness
  • Hot Dishes – traditional and modern Japanese hot cuisine
  • Cold Dishes – elegant entrée and side dishes showcasing fresh seasonal produce
  • Filleting & Butchery – whole fish handling (tuna, kingfish, snapper, etc.), premium seafood & meat preparation
  • Japanese Stocks & Sauces – dashi, miso, tare, ponzu, yakitori glaze, and other essentials of authentic flavour
  • Plating & Presentation – refined, artistic plating consistent with luxury dining standards

CANDIDATE PROFILE

  • Relevant Commercial Cookery diploma or equivalent experience required, with minimum 6 years' experience in high-end a la carte restaurants specializing in Japanese cuisine.
  • Deep understanding of Japanese food culture, seasonality, and premium ingredients.
  • Able to lead by example, maintain consistency, and train junior staff when required.
  • Ability to operate all relevant Japanese style preparation/cooking equipment.

· Collaborate with management to plan and develop recipes and menus, factoring seasonality and projected sales.

  • Strong work ethic, attention to detail, and commitment to excellence.
  • Available to work days, evenings and weekends. (8 at Trinity is currently closed on Mondays and Tuesdays however kitchen prep team works through the week)

This position is for a chef who thrives in a premium, authentic Japanese restaurant setting, not in fast-casual or bulk production.
