Salary: $95,000 – $100,000 + regular salary reviews

Fish House Steak & Grill is the exciting new venture from the multi award-winning hospitality group behind the iconic Bella Venezia. We're setting a new benchmark for premium steak & seafood dining with a Japanese-influenced menu showcasing Australia's finest seafood and premium cuts of steak.

We're seeking an experienced and hands-on Head Chef to lead our kitchen team—working alongside Executive Chef Ben Achurch and the Director—while shaping the culinary identity of this brand-new venue. With everything in place to be part of something amazing, Fish House Steak & Grill is scheduled to open on 27th August 2025.

About the role:
  • Lead and inspire the kitchen team by being hands-on and leading by example
  • Drive menu creation with a Japanese-influenced approach to steak & seafood
  • Manage kitchen operations: rostering, stock, ordering & compliance
  • Uphold the highest standards of food safety and hygiene
  • Mentor and develop a motivated, high-performing team
About you:
  • Proven experience as a Head Chef or Senior Sous in a high-end, fast-paced venue
  • Chef Hat experience preferred, but not essential
  • A hands-on leader who motivates the team by example
  • Passion for premium produce and contemporary cuisine
  • Strong organisational, financial, and operational management skills
