Under the leadership of Head Chef Romeo Baudouin, our team specialises in whole-animal cooking, artisanal charcuterie, and premium butchery, producing exceptional products that showcase respect for ingredients and culinary tradition.

The Role

We are seeking a skilled Chef with strong expertise in charcuterie and butchery. This is a hands-on role within our Production Kitchen, working directly with Head Chef Romeo Baudouin. You will refine your craft by learning from his expertise, producing premium charcuterie and butchery products from whole cuts, and contributing to the continued excellence of Vic's Premium Quality Meat Group.

Key Responsibilities
  • Preparing and presenting high-quality dishes in line with our menu and seasonal offerings
  • Fabricating and breaking down primal cuts into portions suitable for service
  • Crafting house-made charcuterie including terrines, pâtés, sausages, and cured meats
  • Maintaining rigorous food safety and hygiene standards, particularly in meat handling
  • Working closely with the Head Chef and team to design menus that highlight charcuterie and whole-animal cooking
  • Managing stock, minimizing waste, and ensuring efficient use of ingredients
  • Training and mentoring junior staff in butchery and charcuterie techniques
About You
  • Trade-qualified Chef with proven experience in professional kitchens
  • Demonstrated skills in charcuterie production (sausages, terrines, curing, smoking)
  • Solid knowledge of butchery fundamentals, with the ability to break down whole or primal cuts
  • Strong understanding of HACCP and food safety compliance
  • Passionate about nose-to-tail cooking, sustainability, and artisanal craftsmanship
  • Creative, organised, and able to work collaboratively within a fast-paced kitchen
