Since 2006, we've run an artisan butchery working exclusively with whole animals, all sourced from local regenerative farms. We're dedicated to craft-based butchery and sustainable, ethical farming and our meat and poultry regularly wins awards for quality and farming standards.

We sell to retail customers through our online shop and our two retail shops (Marrickville and Waverley). We also have restaurant customers whom we service from our Marrickville production facility, where we also produce a large range of ready-to-eat products that include ragus, curries, broths, and a range of fine charcuterie products.

The position

Join our team as our Senior Production Chef where you will oversee the preparation and finishing of our ready-to-eat meals, broths, and charcuteries. Along with developing and executing catering menus for our whole animal spit and catering offer.

Key responsibilities

  • Oversee and prepare our range of ready-to-eat meals, broths, and charcuterie.

  • Develop seasonal menu plans for our ready-to-eat products and charcuterie.

  • Develop seasonal menu plans for our whole animal spit and catering offer.

  • Provide creative direction and support for the in-house production of small goods and smoked products.

  • Develop procedures for efficient, cost-effective, agile kitchen production across all product levels from basic broths, to ready-to-eat meals and charcuterie.

  • Liaise with suppliers and manage weekly ordering.

  • Maintain the kitchen in accordance with an 'A' grade NSW Food Authority rating.

  • Assisting with maintaining of daily food safety records.

What you'll need to bring:

  • A commercial cookery qualification or equivalent experience.

  • Experience working in a commercial kitchen that performs large batch size cooking is highly desirable. This role would also be suitable for a restaurant chef looking for an enhanced work-life balance who has a demonstrable ability to be organised and methodical - attributes required to be successful at large scale batch cooking.

  • An interest and experience in charcuterie is highly desirable.

  • Experience and knowledge of food safety standards and compliance.

  • Be the holder of a Food Safety Supervisor certificate.

  • Punctual, reliable, and energetic.

  • Plenty of enthusiasm and a passion for butchery

Hours & conditions

Good hours for work-life balance. Must be available to work at both our Marrickville and Waverley locations and some weekend work.
