You'll run daily service, manage the brigade, and bring your vision to life on the plate — all while staying sharp with food trends, seasonal changes, and modern execution.

What You'll Be Doing

  • Lead a passionate and skilled kitchen brigade in a fast-paced environment
  • Manage kitchen operations end-to-end — from prep and service to rosters, ordering, and compliance
  • Own food cost, stock control, and labour targets without sacrificing quality
  • Collaborate with ownership on seasonal menus and weekly specials
  • Uphold clean, structured kitchen systems with a focus on training and consistency
  • Ensure every plate reflects modern Australian sensibilities with global influence

What You'll Need

  • Experience as a Head Chef or Senior Sous in a high-end or premium casual dining setting
  • Classically trained, with a sharp eye for plating, flavour balance, and execution
  • Up-to-date on modern Australian food trends and international influences
  • Strong back-of-house admin skills — rosters, costings, compliance, food safety
  • Calm, confident leader who leads from the front and earns respect in the kitchen
  • Genuine passion for food, team culture, and running a kitchen with integrity
