About the Role

We are seeking a highly experienced and professional Restaurant Manager to lead the KOTO team. You will oversee all aspects of front-of-house operations, maintain the highest service standards, and work closely with the kitchen and executive team to deliver an outstanding dining experience.

This is a hands-on leadership role suited to someone who thrives in a fast-paced, high-end environment and has a genuine passion for hospitality and guest experience.


Key Responsibilities
  • Lead and manage all front-of-house operations.
  • Recruit, train, and mentor a high-performing service team.
  • Maintain service excellence and consistency across all shifts.
  • Implement and monitor systems and workplace procedures.
  • Manage budgets, rostering, and cost control effectively.
  • Ensure compliance with WHS, RSA, and food safety standards.
  • Collaborate with senior management to achieve business goals.

Skills & Experience
  • Minimum 5 years' experience in a similar management role within fine dining or premium restaurants.
  • Diploma qualification in hospitality or equivalent industry experience.
  • Proven leadership skills with the ability to inspire and motivate a team.
  • Strong business acumen and understanding of financial controls.
  • Excellent communication, organisation, and time management skills.
  • Sound knowledge of Japanese cuisine, premium beverages, and wine service preferred.
  • Current RSA Competency Card and full Australian working rights are essential.
