Full Time Senior Sous Chef

Steeped in history, Fondata 1872 located in beautiful Kangaroo Ground is the revival of the iconic Weller's, we are currently seeking an experienced Sous Chef to join our dedicated kitchen team.

Established in 1872 as a Cobb & Co Inn, Fondata is now a busy Italian inspired restaurant. Boasting an 80-seat dining room, two large private function spaces, stunning outdoor dining areas along with large open fireplaces, Fondata is the perfect venue for locals, travellers and weddings.

Reporting to the head chef you will be part of a team that strives to provide our customers with the highest quality rustic Italian food on a daily basis.

Key Responsibilities:

  • Assist in menu planning, development, and execution of dishes
  • Maintain high-quality standards for food preparation and presentation
  • Oversee kitchen operations and staff during service
  • Ensure compliance with food safety and hygiene regulations
  • Manage stock control and ordering to minimize waste
  • Support and train kitchen staff

Skills & Experience:

  • A minimum of 2 years proven experience as a Sous Level chef or a Senior Chef within a premium A la Carte Venue.
  • Exceptional leadership skills with the proven ability to motivate and mentor a large team.
  • Excellent communicationskills & positive attitude.
  • Immaculate presentation and passionate customer service advocate.
  • Overall knowledge of all operations, ordering, stock control and working to budgets
  • Flexibility to work a rotating roster, public holidays and weekends.
  • Align with the company's values and reputation by leading an example.
  • You must also meet the legal requirements to work in Australia, with no limitations.
