GENZO is part of AURA by Aqualand, located on Walker Street less than 1 minute walk from the Victoria Cross Metro Station - an iconic new address and symbol of North Sydney's sophisticated future, setting a new precedent for luxury harbourside living.

The Opportunity

As Senior Sushi Chef, you will be responsible for the creation, development and execution of the sushi and sashimi offerings for the venue. You will report directly to the Executive Chef, playing a key leadership role in shaping the culinary identity of GENZO.

This is a full-time opportunity only for a highly skilled and creative sushi chef who thrives in high-end dining environments. You will lead by example, ensuring consistency, precision and artistry in every dish, while maintaining the highest standards of food safety, hygiene and presentation.

The Skills You Bring

  • Extensive experience as a Sushi Chef, ideally in fine dining or Hatted environments
  • Proven ability to design, execute and innovate sushi menus
  • Formal qualification in Commercial Cookery or equivalent professional experience
  • Strong leadership and mentoring skills, fostering development within the team
  • Impeccable knife skills, attention to detail, and deep knowledge of Japanese cuisine
  • Dependable and resilient, with the ability to perform at the highest standard in a fast-paced kitchen
