Are you a master of the hearth? Do you possess the skill and intuition to coax the perfect crust and crumb from a deck oven? We are seeking an experienced and passionate Specialist Baker to join our dedicated team and elevate our bread program to new heights.

Our production facility is centered around our battery of high-performance deck ovens, which are integral to achieving the signature texture and flavor of our products.

The Role

We are looking for a baker with demonstrated, expert experience specifically operating and managing deck ovens in a high-volume production environment. This is a hands-on role where your expertise will be critical to the daily success of our bread production.

Key Responsibilities:

  • Expert Oven Management: Precisely load, unload, steam, and monitor multiple decks simultaneously to ensure consistent, high-quality results across all batches.
  • Dough Mastery: Work with a variety of doughs (sourdough, yeasted, enriched) and understand how their fermentation and proofing stages interact with the high heat of a deck oven.
  • Quality Control: Maintain an uncompromising standard for crust development, crumb structure, and final product appearance.
  • Production Efficiency: Manage baking schedules to maximize oven utilization and meet daily production targets.
  • Maintenance: Ensure the deck ovens are cleaned and maintained according to schedule and report any maintenance needs promptly.
  • Team Collaboration: Work closely with the rest of the production team, offering guidance and support when needed.

What You'll Bring

  • A minimum of 1 year of professional baking experience, with a significant focus on deck/hearth oven operation.
  • Knowledge of heat transfer, steaming techniques, and temperature management specific to deck ovens.
  • The physical stamina required for a demanding, fast-paced kitchen environment, including lifting heavy doughs and managing large peels.
  • A strong understanding of food safety and hygiene regulations.
  • A reliable, detail-oriented, and self-motivated work ethic.
