The Opportunity:
We are looking for a highly skilled and passionate Senior Sous Chef to become a cornerstone of our kitchen leadership. This is a key role for a chef who thrives on autonomy, possesses deep knowledge of Japanese cuisine, and is driven by excellence. You will work closely with the Head Chef in all aspects of kitchen management, with a strong emphasis on maintaining the integrity of our dishes, developing new menu items, and leading the team during service.
Your Key Responsibilities:
· Oversee daily kitchen operations in the absence of the Head Chef, ensuring seamless service.
· Uphold and enforce the highest standards of food quality, consistency, and presentation specific to Japanese yakiniku and accompanying dishes.
· Train, mentor, and motivate a team of chefs and kitchen hands, fostering a culture of continuous learning and respect for Japanese culinary traditions.
· Manage kitchen inventory, ordering, and stock control with a focus on quality and cost-efficiency.
· Contribute to menu development, incorporating seasonal ingredients and innovative ideas while staying true to authentic Japanese flavours.
· Ensure strict adherence to all health, safety, and hygiene regulations.
What We Are Looking For (The Essential Criteria):
· Proven Experience: Minimum of 5 years in a Japanese kitchen environment, with significant experience in a Sous Chef or Senior Chef de Partie role. Expertise in yakiniku, teppanyaki, robata, or traditional Japanese cooking is essential.
· Autonomy & Leadership: A demonstrated ability to work independently and without constant supervision. You are a self-starter who takes full ownership of your section and the kitchen when required.
· Technical Mastery: In-depth knowledge of Japanese ingredients, techniques, knife skills, and flavour profiles. Ability to prepare traditional bases (dashi, tare, sauces) from scratch.
· Leadership Prowess: Natural leader with excellent communication skills and the ability to command respect, delegate effectively, and develop a team.
· Organisational Excellence: Impeccable organisational skills, with the ability to manage multiple tasks under pressure in a fast-paced environment.
· Right to Work: Must have full, unrestricted working rights in Australia.
