At Tommy Collins, we pride ourselves on providing an offering that is equal parts service, style and consistency. Our team has been responsible for executing highly regarded events such as Melbourne Fashion Festival, Australian Open, Portsea, Beach & Flinders Polo's, Good Food Month and catering for high profile private & corporate clients weekly.
Tommy Collins works across multiple industries, including luxury, automotive and fashion brands, property, media and banking & finance.
The team is also known for their bespoke offering and attention to detail when working with clients on private events, such as weddings, birthdays and other milestone celebrations.
The Opportunity
We are seeking an experienced Executive Chef with a proven background in catering and food production, including bakery & pastry, who has great time management and communication skills, loves people and hospitality.
You will be responsible for managing the daily operations of the kitchen and kitchen team, ensuring an exceptional delivered at all times. You will manage relevant costs within the established budget and you will assist with implementing processes to guarantee the highest quality, consistency, creativity and customer satisfaction.
This role will oversee the preparation and production of menus for our events ranging from canapés, sit down, banquette, bakery and everything in between, along with a range of items for supply to our stable of venues.
About You
Experience in catering is essential so you will have at least 3 years experience as an Executive Chef or similar role in the catering environment. In addition you will have:
- Exceptional leadership and communication skills
- Innovative and creative approach to menu development
- Ability to build and maintain effective relationships
- Experience in Hygiene, Food Safety and OH&S standards and compliance
- Experience in effectively maintaining and managing set ups, changeovers, closedown and handover to standard
- Use correct techniques and follow procedures and recipes when preparing and cooking menu items
- Excellent attention to detail
- Calm and composed demeanour and ability to work well in a fast-paced environment
- Qualifications in Commercial Cookery or equivalent experience
- Experience with Cooking the Books & Fresho is preferred but not essential
