As a 'Coeliac Australia' accredited restaurant, we are proud to offer a high-quality gluten-free menu that never compromises on taste.
Key Responsibilities
- Lead daily restaurant operations, ensuring smooth and efficient service.
- Maintain and uphold Coeliac Australia accreditation requirements, including staff training and safe food handling procedures for gluten-free service.
- Recruit, train, roster, and manage front-of-house staff to deliver warm, professional, and efficient service.
- Collaborate with the Head Chef and kitchen team to ensure menu consistency, quality, and dietary compliance.
- Manage reservations, guest relations, and conflict resolution with a customer-first approach.
- Organising and coordinating functions/special events to ensure they are executed seamlessly and successfully
- Oversee stock control, supplier relationships, ordering, and inventory management.
- Monitor budgets, sales targets, and cost controls to maximise profitability.
- Conducting regular meetings with the Managing Director and providing clear, timely reports on restaurant operations
- Maintain a clean, safe, and compliant venue in line with Occupational Health and Safety regulations
- Ensuring Food Safety procedures are followed.
- Overseeing waste management processes, ensuring correct recycling and sustainable disposal practices
- planning menus in consultation with Chefs
- planning and organising special functions
- arranging the purchasing and pricing of goods according to budget
- maintaining records of stock levels and financial transactions
- ensuring dining facilities comply with health regulations and are clean, functional and of suitable appearance
- conferring with customers to assess their satisfaction with meals and service
- selecting, training and supervising waiting and kitchen staff
- may take reservations, greet guests and assist in taking orders
Skills & Experience
- Proficiency in English
- Proven experience as a Restaurant Manager or in a senior hospitality role.
- Strong knowledge of Italian cuisine, wine, and service etiquette.
- Experience working in a gluten-free or allergy-aware food service environment (preferred but not essential if willing to train).
- Exceptional leadership, communication and team management skills.
- Strong organisational and problem-solving abilities.
- Financial literacy and understanding of budgeting, cost control and reporting.
- Ability to thrive in a fast-paced, high-volume environment while maintaining attention to detail.
Qualifications
- Responsible Service of Alcohol (RSA) certification (required).
- Food Safety Supervisor certification (required or willing to obtain).
- Coeliac Australia training or willingness to complete.
Remuneration
- Salary $80,000 - $90,000
