Eat Cannoli is seeking a seasoned baker ready to take the reins of our production kitchen. This isn't just a job — it's a leadership opportunity inside one of Melbourne's most loved gluten-free bakeries, with expansion plans already proofing for 2026.

About the Role:

You'll oversee daily baking operations, uphold quality across all products, and mentor junior team members. You'll work hands-on while guiding others — balancing precision, pace, and pride in everything from our sourdough to our signature cannoli.

Responsibilities:

  • Lead production schedules and maintain consistency.
  • Train and support bakery staff to uphold GF standards.
  • Assist with stock control, supplier coordination and product testing.
  • Early starts (around 5:30/6 am), but afternoons free for life outside the kitchen.

What You'll Bring:

  • Minimum 3 years baking experience, ideally in artisan or café environments.
  • Strong sense of ownership, organisation and teamwork.
  • Ability to lead calmly and lift others' standards.
  • Passion for gluten-free craft (no shortcuts, no compromise).
