About the role

We are seeking an exceptional Executive Chef to join our talented team at The Lodge Jamberoo', a premier hospitality destination in the heart of Jamberoo, NSW. In this full-time role, you will be responsible for leading our kitchen operations and overseeing the creation of exceptional dining experiences for our guests.

What you'll be doing

  • Develop and manage the overall culinary vision and direction for the hotel's food and beverage offerings
  • Lead and motivate a team of skilled chefs to deliver consistently high-quality, innovative dishes
  • Oversee the creation of seasonal menus and daily specials, ensuring they align with the hotel's brand and target market
  • Manage food preparation, presentation, and service to uphold the highest standards of quality and efficiency
  • Maintain strict cost controls, inventory management, and budgeting for the kitchen department
  • Foster a positive, collaborative, and professional work environment in the kitchen
  • Ensure compliance with all relevant health, safety, and food hygiene regulations

What we're looking for

  • Minimum of 5 years' experience as an Executive Chef or in a similar senior culinary leadership role
  • Strong background in managing a fast-paced, high-volume kitchen within the hospitality industry
  • Proven track record of creating innovative, visually appealing, and delicious menu items
  • Excellent communication, leadership, and team management skills
  • Thorough knowledge of food safety, hygiene, and cost control practices
  • Passion for using fresh, locally-sourced ingredients and developing sustainable practices
  • Formal culinary training or qualifications, such as a degree in Culinary Arts or equivalent
