Mercure Rockhampton is looking for a skilled and motivated Chef to join our busy kitchen team. This is a full-time position suited to someone with a strong background in commercial cookery and proven experience in a professional kitchen.

About the Role:

Mercure Rockhampton is located at the heart of the Rockhampton city, just a short drive from the Rockhampton Airport. The perfect location for accessing the famous Great Keppel Island and other spectacular locations along the Capricorn Coast. The hotel overlooks the picturesque Fitzroy River and offers an outdoor pool, fitness centre as well as 24hour reception. Each room features a private balcony and modern amenities.

Key Duties and Responsibilities:

  • Create and update menus that reflect seasonal availability and customer demand.
  • Manage stock levels by accurately ordering, receiving, and storing ingredients.
  • Cook and prepare meals to a consistently high standard, ensuring quality and presentation are maintained.
  • Oversee food preparation from start to finish, ensuring efficiency and attention to detail.
  • Work collaboratively with other kitchen and service staff to ensure smooth operations.
  • Provide guidance and training to junior kitchen staff and apprentices.
  • Uphold food safety, hygiene, and workplace health and safety standards at all times.
  • Contribute ideas for new dishes and kitchen improvements.

Qualifications and Experience:

  • Certificate III/IV in Commercial Cookery (or equivalent qualification) is essential.
  • At least 1 year of relevant experience as a Chef in a commercial kitchen.
  • Strong knowledge of modern cooking techniques and food safety regulations.
  • Ability to thrive in a fast-paced environment and deliver under pressure.
