Under the guidance of Executive Chef Sommers, we are redefining Tasmanian dining. We are now seeking a creative, passionate, and technically skilled Sous Chef to become a pivotal part of our kitchen's leadership and help shape our future.

About the Role:

This is a crucial role for a culinary force, working as the right-hand and creative partner to Chef Sommers. You will not just execute a menu; you will help create it. You will be instrumental in driving our vision forward, translating the wild beauty of Tasmania onto the plate.

Your key responsibilities will include:

  • Collaborating directly with Chef Sommers on menu development, from initial concept to final execution.
  • Leading, mentoring, and inspiring a passionate and dedicated kitchen team.
  • Running the pass and managing service with precision, calm, and confidence.
  • Upholding the highest standards of quality, consistency, and technique.
  • Building and maintaining relationships with Tasmania's best growers, fishers, and artisans.

  • Experience: Proven experience as a Sous Chef or a highly ambitious Chef de Partie in a hatted or equivalent fine-dining environment.
