We are seeking a skilled and dedicated Junior Butcher with experience working in Japanese Yakiniku restaurants to join our team. XYZ Central Meat Kitchen is the dedicated production hub for our group, supplying premium meat products and preparations support Azabu Group restaurants, including Choji Yakiniku, Hanasuki, Happi Burger, Happi Ramen, and Prefecture 48.
Our team specialises in high-quality meat selection, butchery, and preparation with a strong focus on Japanese culinary standards—particularly the precision and presentation required for Yakiniku and Shabu Shabu. By centralising our operations, we ensure consistency, quality control, and efficiency across all venues, allowing each restaurant to deliver an exceptional dining experience that reflects our shared commitment to excellence.
About the role
- Assist the head Chef in daily operations, including the breakdown and preparation of various cuts of meat for Yakiniku;
- Ensure all meat is prepared to the highest standards of quality and presentation;
- Maintain a clean, organized, and sanitary work environment in accordance with food safety regulations;
- Adhere to all HACCP guidelines and ensure all meat handling processes meet food safety standards;

- Properly label, date, and store all meat products to ensure freshness and prevent cross-contamination;
- Monitor and manage the inventory of meat products, ensuring optimal storage conditions and efficient stock rotation and assist in ordering supplies as needed;
- Collaborate with chefs and kitchen staff to ensure timely and accurate meat preparation;
- Utilise excellent knife skills to prepare precise cuts of meat. Maintain all butchery tools and equipment, ensuring they are clean, sharp, and in good working condition;
- Follow recipes and guidelines provided by the head butcher and chefs. Contribute to the development of new recipes and menu items by providing input on meat preparation techniques and cuts;
- Minimise waste by utilizing all parts of the meat and adhering to portion control guidelines. Implement sustainable practices to reduce waste and improve efficiency;
- Follow all company policies and procedures related to food safety, hygiene, and workplace safety;
About you
- Minimum of 2+ years' experience as a butcher, experience in Japanese Yakiniku restaurants is ideal but not mandatory;
- Strong understanding of various meat cuts, particularly those used in Yakiniku;
- Knowledge of Japanese culinary techniques and traditions;
- Ability to work efficiently and accurately in a fast-paced environment;
- Excellent knife skills and attention to detail;
- Strong communication and teamwork skills;
- Ability to lift and handle heavy items as required;
