Mr Percival's, located at Howard Smith Wharves, has entered an exciting new era, now serving a Mediterranean-inspired menu at Brisbane's favourite overwater bar.

With a brand-new kitchen and a menu bursting with bold, sun-soaked flavours, we've elevated the dining experience and are looking for a passionate Chef de Partie to join our team and help deliver this vibrant new chapter.

Key Responsibilities:

  • Prepare, cook, and present dishes to the highest standards, ensuring consistency, quality, and portion control.
  • Manage a designated section of the kitchen, maintaining smooth and efficient operations during service.
  • Assist the Sous Chef and Head Chef with menu planning, recipe development, and introducing seasonal dishes.
  • Ensure compliance with food safety standards, including correct storage, handling, and preparation in line with HACCP and Australian food safety regulations.
  • Monitor stock levels for your section, report shortages, and assist with stock rotation and inventory management to minimise waste.
  • Work efficiently under pressure in a fast-paced environment while maintaining exceptional attention to detail.
  • Assist with ordering and supplier management, ensuring produce meets quality specifications.
  • Maintain a clean, organised, and safe workspace, following workplace health and safety policies.

What we are looking for:

  • Proven experience in commercial kitchen, ideally 2-4 years' experience as a CDP.
  • Background working in high volume, fast paces restaurants or premium dining venues.
  • Experience managing a specific section.
  • A genuine passion for food and mediterranean flavours.
