The Role
As Baker Manager, you will oversee our bread production team and ensure the smooth operation of our baking processes across sites. You’ll be responsible for maintaining the high standards L’épi is known for, while leading a team of passionate bakers and contributing to the ongoing evolution of our product offering.
This is a full-time, hands-on role that blends production leadership with operational oversight and collaboration.

Key Responsibilities
- Oversee daily bread production, ensuring product quality, consistency, and timing across sites.
- Lead, train, and support the baking team, maintaining a strong, collaborative kitchen culture.
- Maintain and document production systems and procedures to ensure efficiency and consistency.
- Work with the Bakery Production Lead to coordinate schedules, manage prep lists, and oversee day-to-day execution.
- Monitor dough management, fermentation, shaping, baking, and finishing for multiple products.
- Ensure all products meet L’épi’s aesthetic and quality standards before going out to café locations.
- Collaborate with management and chefs to test and implement new products or seasonal ranges.
- Contribute to ordering, stock control, and inventory tracking, helping to reduce waste and control costs.
- Uphold all food safety, hygiene, and OH&S standards in the bakery.
- Maintain and monitor baking equipment and production areas, reporting any maintenance needs.

About You
- You are a qualified, experienced baker, ideally with 5+ years in a professional bakery environment.
- You have experience managing or leading a baking team and thrive in a structured, fast-paced environment.
- You’re confident in all aspects of bread production: mixing, shaping, fermentation, baking, and finishing.
- You understand the importance of process, consistency, and timing, especially in high-volume production.
- You take pride in attention to detail, from crust colour to crumb structure to scoring technique.
- You’re an effective communicator who can coordinate with production teams, café managers, and leadership.
- You’re passionate about artisanal baking and committed to passing on your knowledge to junior bakers.
- You’re reliable, calm under pressure, and genuinely love working with your hands—and your team.
- You have full-time availability and a valid driver’s license (own vehicle is preferred, as you may occasionally travel between sites).
