Brasserie Bread Operations Pty Ltd is seeking a hands-on and dedicated Assistant Production Manager to join our dynamic bakery team. In this role, you’ll be integral to ensuring the consistent production of high-quality, hand-crafted bread products—made with traditional techniques that define our brand.

**The Role**

The Assistant Production Manager supports the daily operations of the bakery team, ensuring that production targets, quality standards, and safety requirements are met. This role requires physical stamina, attention to detail, and strong leadership to uphold our artisan traditions.

**Key Responsibilities**
- Produce quality bread products according to daily production sheets and hand-made techniques
- Calculate, weigh, mix, and mould dough for various products
- Ensure fermentation, proofing, and baking processes are followed precisely
- Lead, coach, and guide a team of over 40 bakery staff
- Supervise and support production across multiple shifts
- Oversee equipment usage and coordinate maintenance needs
- Monitor PPE and hygiene compliance; address non-conformance immediately
- Ensure accurate completion of production records and checklists
- Prepare weekly rosters using Humanforce and manage time/attendance tracking
- Provide training, cross-training, and onboarding for new staff
- Champion HACCP, WHS, Halal, and Food Safety practices
- Report incidents, near misses, and safety concerns to management
- Work collaboratively with QA to implement and improve food safety procedures
- Drive a culture of safety, accountability, and continuous improvement

**About you**
- Relevant bakery or food production qualification
- Sound knowledge of HACCP and WHS standards
- Proven leadership in a bakery or food manufacturing environment
- Strong problem-solving and communication abilities
- Proficiency with bakery equipment and production processes
- Experience managing artisan or handmade bakery operations preferred
- Ability to work early mornings, weekends, and in a physically active environment
