Bakery Pastry Position

We are seeking an experienced Pastry Chef (Chef de Partie) to lead our pastry team in creating exquisite desserts, pastries, and confections that meet the highest standards of quality, presentation, and innovation.

Key Responsibilities:

  • Design seasonal pastry menus with modern techniques, refining flavors and presentation
  • Create dessert concepts matching our vision, ensuring creativity and precision in plating and garnishing
  • Prepare a variety of desserts, including mille-feuille, tart, crème brûlée, and deconstructed pavlova; produce puff pastry, tart shells, creams, and sugar décor to specification
  • Uphold flawless tempering, baking, and finishing techniques, ensuring every plate meets taste, texture, and look standards
  • Coach junior team members in plating and garnishing techniques, mentoring them on technique, safety, and hygiene
  • Raise section standards through skills sessions, delegating tasks for smooth service flow and minimizing waste
  • Log stock rotation and waste data, enforcing HACCP, cleaning, and safe handling procedures to maintain a spotless and organized pastry area
  • Coordinate with Head Chef and FOH for seamless service, upholding high standards of quality and presentation

Requirements:

  • Minimum 2 years as Pastry CDP in fine dining, with proven pastry and confectionery skills
  • Modern techniques and seasonal produce knowledge, with a certificate in Commercial Cookery (Certificate III/IV)
  • Organized leadership and calm under pressure, with passion for pastry and creativity in dessert presentation
  • Attention to detail and high standards of quality, with leadership qualities and the ability to inspire and mentor junior team members
  • Strong work ethic, reliability, and professionalism, with a willingness to learn and adapt to new techniques and trends
