About the Role

We are seeking an experienced and passionate Head Chef to lead our new Mediterranean venue in Cairns, located on the waterfront dining precinct.

As a fully qualified Head Chef, you will report to the Venue Manager and assume overall leadership and responsibility for the cost-effective management of the kitchen to maximise food profitability, whilst ensuring food safety standards and total guest satisfaction.

Key Responsibilities
  • Lead the kitchen team in a hands-on manner, ensuring consistent food quality.
  • Maintain food and wage costs in line with targets.
  • Design, cost and implement innovative menus that showcase Greek and Mediterranean cuisine.
  • Order and manage stock effectively.
  • Prepare meals to a high standard.
  • Stay up-to-date with current trends and competitors.
  • Set and review service standards to exceed guest expectations.
  • Ensure total compliance with WHS, food safety, company and legislated policies.
  • Recruit, train and develop a skilled and motivated kitchen team.
About You

We are looking for a creative and enthusiastic individual who is passionate about food and delivering exceptional dishes. To be successful in this position, you will have:

  • At least 3 years' experience as a Head Chef in Greek or Mediterranean cuisine.
  • Tertiary qualifications in commercial cookery or a culinary degree in hospitality.
  • A proven track record of leading a kitchen team in a busy and high-volume environment.
  • Excellent communication and leadership skills, with the ability to motivate and inspire your team.
  • Strong administration skills, including computer literacy.
  • Experience with kitchen management software or similar systems.
  • The flair, enthusiasm and passion to create exceptional dishes that delight our guests.
