Culinary Team Lead at The Star Brisbane

The Sous Chef will play a vital role in driving the culinary team to achieve success through day-to-day operations, working collaboratively within the food and Beverage operation to provide a positive and memorable team and guest experience.
About YouYou will be able to provide exceptional culinary skills, outstanding communication, and hold the ability to lead a successful kitchen team with a proven track record in achieving financial targets. As we move to The Star Brisbane, you will be critical in leading the team through change, whilst setting and maintaining the highest service and safety standards.
Responsibilities- Cost Management: Manage costs across both operational, food and labour while maintaining quality.
- Team Motivation: Foster a winning, solution-oriented work environment, motivating and engaging employees to continuously deliver the best possible service to our guests in line with The Star values.
- Culinary Excellence: Demonstrate the ability to prepare food items consistently to the highest standards in accordance with established menu plans.
- Performance Evaluation: Evaluate the performance of all direct reports and provide mentorship to enhance each team member's growth.
- Menu Development: Supporting continuous menu concept, tasting and design utilising local suppliers and keeping ahead of market trends.
- Leadership Experience: Demonstrated leadership experience.
- Certificate in Commercial Cookery: Certificate in Commercial Cookery (or equivalent qualification).
- High-Volume Food Preparation: Demonstrated knowledge of high-volume food preparation.
- Food Safety: Strong understanding of food safety requirements.
