The RoleWe are seeking a highly skilled and experienced Sous Chef to join our team in the Banquet kitchen. As a key member of our culinary team, you will be responsible for planning and directing food preparation, motivating and supporting a team of qualified chefs and kitchen stewards, and consistently delivering exceptional food experiences for our guests and staff.
Key Responsibilities- Manage kitchen operations in a hotel or similar medium-sized operation
- Run the banquet kitchen with a hands-on approach
- Communicate effectively with a diverse audience
- Plan, prioritize, and organize workload
- Understand food cost, wastage, budgeting, and manning
- Maintain kitchen hygiene practices, environmental, and food safety standards
- Mentor, coach, support, and lead a team
- Ensure HACCP certification and physical and administrative compliance
- Maintain the kitchen in a high-hygienic state and present it well
- Adhere to Enterprise Agreement requirements
- Assist with on-the-job training for new team members
- Keep up-to-date with the latest trends in the food service industry
- Interact positively and professionally with all departments
- Assist with controlling and managing food costs
- Diploma of Hospitality Management or Cert IV in Commercial Cookery or equivalent work experience
- Ability to work in a fast-paced kitchen
- Excellent communication skills
- Team player
- Ability to work rotating shifts across 7 days
- Proactive approach to system improvements
- HACCP and relevant food safety accreditation
