The Role

We are seeking a highly skilled and experienced Sous Chef to join our team in the Banquet kitchen. As a key member of our culinary team, you will be responsible for planning and directing food preparation, motivating and supporting a team of qualified chefs and kitchen stewards, and consistently delivering exceptional food experiences for our guests and staff.

Key Responsibilities
  • Manage kitchen operations in a hotel or similar medium-sized operation
  • Run the banquet kitchen with a hands-on approach
  • Communicate effectively with a diverse audience
  • Plan, prioritize, and organize workload
  • Understand food cost, wastage, budgeting, and manning
  • Maintain kitchen hygiene practices, environmental, and food safety standards
  • Mentor, coach, support, and lead a team
  • Ensure HACCP certification and physical and administrative compliance
  • Maintain the kitchen in a high-hygienic state and present it well
  • Adhere to Enterprise Agreement requirements
  • Assist with on-the-job training for new team members
  • Keep up-to-date with the latest trends in the food service industry
  • Interact positively and professionally with all departments
  • Assist with controlling and managing food costs
Requirements
  • Diploma of Hospitality Management or Cert IV in Commercial Cookery or equivalent work experience
  • Ability to work in a fast-paced kitchen
  • Excellent communication skills
  • Team player
  • Ability to work rotating shifts across 7 days
  • Proactive approach to system improvements
  • HACCP and relevant food safety accreditation
