Job Summary:

We are seeking a talented and passionate Executive Chef Assistant to join our award-winning kitchen brigade at Novotel Brisbane South Bank. As a key member of our culinary team, you will have the opportunity to work with a talented group of professionals who share our passion for great cuisine and quality.

Key Responsibilities:

  • Under the supervision of the Executive Chef and senior chefs, prepare and present menu items showing variety and flair, within the cost margins specified by the hotel.
  • Ensure strict stock rotation and minimum wastage, implementing and maintaining stock control procedures.
  • Prepare mis en place as required, and check that all cooked and pre-cooked foods are properly stored.
  • Liaise with the restaurant team regarding the availability of menu items, additions to the menu, and any relevant changes.
  • Keep all working areas clean and tidy, ensuring all equipment is maintained, serviced, and cleaned, and reporting any problems to the Executive Chef.
  • Ensure Work, Health, and Safety procedures are observed to ensure the team's and guests' safety.
  • Contribute to our Heartiest Culture by embodying our values and behaviors.

Requirements:

  • A genuine passion for cuisine and cooking with a creative flair.
  • Previous experience in similar roles within an a la carte environment.
  • An interest in learning and developing your career with industry professionals.
  • Trade qualifications with previous experience an advantage.
  • A working understanding of food safety standards and HACCP.
  • A high standard of hygiene, grooming, and presentation.
  • Excellent communication skills with fluency in English; additional languages a plus.
  • Flexibility regarding work availability, as we operate 7 days a week, including public holidays.
