This unique opportunity allows you to immerse yourself in the vibrant world of Amazonian forest foods and culinary arts. Learn about the diverse range of edible species that exist in the Amazon, including fruits, vegetables, nuts, spices, and insects.
Your Responsibilities- Collaborate with local farmers and cooks to learn about traditional farming and cooking practices
- Research and understand the importance of medicinal plants in traditional cooking and medicine
- Prepare traditional dishes with locals and experiment with new flavors and spices
- Contribute to work on agroforestry farms, planting, weeding, and harvesting products
- Create and clear trails in medicinal plant gardens or chakras with locals
- Knowledge of Ecuadorian culinary arts and the intersection between ancestral farming/hunting/fishing practices and modern cuisine
- Insight into indigenous rights, ecotourism, Fair Trade and organic certifications, social entrepreneurship, and community tourism projects
- Skill in researching and identifying local Amazonian products and national and international markets where they can be sold
