Executive Sous Chef

Pegasus Leisure Group, a leading hospitality company, is seeking an experienced and skilled Sous Chef to join their team at The Golden Fleece Hotel in Melton.
The ideal candidate will have a strong background in kitchen management and a passion for delivering exceptional culinary experiences.
**Key Responsibilities:**
- Support the Head Chef in leading and motivating the kitchen team to achieve high standards of quality and service.
- Develop and implement food safety plans to ensure a safe and healthy working environment.
- Prepare and cook menu items to the highest standards, adhering to cooking guidelines and set standards.
- Collaborate with the Head Chef to design and implement new menus, ensuring they meet the company's culinary standards.
- Manage kitchen operations, including inventory management, staff supervision, and maintaining a clean and organized kitchen environment.
- Work effectively under pressure to meet deadlines and deliver high-quality results.
- Lead the kitchen team during service times, ensuring a smooth and efficient operation.
**Requirements:**
- Certificate 3 or 4 in Commercial Cookery or equivalent.
- Full working rights in Australia.
- Experience working in a pub/bistro environment.
- Strong knowledge of kitchen operations and functions, with hands-on experience in all kitchen areas.
- Ability to work as part of a team and communicate effectively with colleagues.
- Flexibility to work a range of hours, including weekends and public holidays.
