Pegasus Leisure Group, a leading hospitality company, is seeking an experienced and skilled Sous Chef to join their team at The Golden Fleece Hotel in Melton.

The ideal candidate will have a strong background in kitchen management and a passion for delivering exceptional culinary experiences.

**Key Responsibilities:**

  • Support the Head Chef in leading and motivating the kitchen team to achieve high standards of quality and service.
  • Develop and implement food safety plans to ensure a safe and healthy working environment.
  • Prepare and cook menu items to the highest standards, adhering to cooking guidelines and set standards.
  • Collaborate with the Head Chef to design and implement new menus, ensuring they meet the company's culinary standards.
  • Manage kitchen operations, including inventory management, staff supervision, and maintaining a clean and organized kitchen environment.
  • Work effectively under pressure to meet deadlines and deliver high-quality results.
  • Lead the kitchen team during service times, ensuring a smooth and efficient operation.

**Requirements:**

  • Certificate 3 or 4 in Commercial Cookery or equivalent.
  • Full working rights in Australia.
  • Experience working in a pub/bistro environment.
  • Strong knowledge of kitchen operations and functions, with hands-on experience in all kitchen areas.
  • Ability to work as part of a team and communicate effectively with colleagues.
  • Flexibility to work a range of hours, including weekends and public holidays.
