Lucas Restaurants is seeking a highly skilled and experienced Senior Sous Chef to lead our kitchen team at Batard, our new restaurant opening in spring 2024. As a key member of our leadership team, you will be responsible for ensuring the highest standards of quality, consistency, and efficiency in our BOH operations.

Key Responsibilities:

  • Lead a team of high-performing chefs and ensure the highest standards of quality and consistency in our dishes.
  • Develop and implement kitchen operations, inventory management, and food safety standards.
  • Collaborate with our culinary team to create innovative and delicious menus that showcase our commitment to global cuisine trends.
  • Manage kitchen budgets, food and labor costs, and ensure profitability.
  • Build and maintain effective relationships with our team members, suppliers, and stakeholders.

Requirements:

  • Minimum 3 years of experience as a Senior Sous or Sous Chef in a premium a-la-carte restaurant.
  • Demonstrated success in leading high-performing teams and driving business growth.
  • Passion for global cuisine trends and commitment to continuous learning.
  • Strong organizational skills, ability to remain composed in high-pressure situations, and a proactive problem-solving attitude.
  • Qualification in Commercial Cookery or equivalent and proficiency in Microsoft Office suite.
  • Availability to work a rotating roster, including weekends, public holidays, opening, and closing shifts.
