We are seeking an experienced Sous Chef to join our team at Park Hyatt Melbourne. As a key member of the culinary team, you will be responsible for ensuring the highest quality of food preparation and presentation while maintaining a safe and efficient working environment.
Main Responsibilities- Oversee the preparation and presentation of all dishes for the restaurant.
- Supervise and manage a team of 15 chefs across two dining periods.
- Work closely with the front and back of house teams to deliver exceptional service.
- Develop and maintain relationships with local suppliers to source fresh and sustainable ingredients.
- Conduct regular audits to ensure compliance with health and safety standards.
- A Certificate III in Commercial Cookery (or equivalent) is essential.
- At least 3 years of supervisory experience in a hotel or similar environment.
- Proven track record of achieving high-quality results in a fast-paced environment.
- Familiarity with HACCP and local food handling regulations.
- Strong leadership and communication skills, with the ability to motivate and guide a team.
