**Job Overview**

As a skilled butcher, you will play a critical role in ensuring the highest quality of meat products for our members. Your expertise will be essential in meeting our stringent standards and procedures.

**Responsibilities:**

  • Inspect and reassemble equipment to ensure it is sanitized and ready for use.
  • Arrange display cases to optimize daily production needs and merchandise rotation.
  • Transfer cases of meat from coolers to cutting or prep areas, cutting, trimming, tenderizing, grinding meat, and checking fat content according to Costco specifications.
  • Follow proper department production procedures and standards for quality and consistency of finished merchandise.
  • Transfer cut and ground meat to Styrofoam trays, load onto large plastic trays, and transfer to large wheeled racks for wrappers.
  • Assist with wrapping and stocking meat cases.
  • Follow Sanitation Standard Operating Procedures (SSOP) guidelines for cleaning and sanitation of all equipment.
  • Complete and comply with 11 Commandments of Quality Assurance, Food Safety Certification, and all safety training required by warehouse and Meat department.
  • Clean and sanitize areas throughout the day.
  • Comply with health code by following sanitation standards and maintaining proper temperatures.

**Required Skills and Qualifications:**

**Flexibility:** Adjust positively to change in direction or assignment. Ability to do more than one task during a work shift.

**Education:** Obtain and have proof of Butcher's Trade certificate.

**Experience:** Meat department, meat cutting, or comparable experience needed.

Accept responsibility for choices and decisions.

Provide prompt and courteous customer service to members, employees, and vendors.
