We are seeking a highly skilled and experienced Executive Sous Chef to join our culinary team at Mindil Beach Casino Resort. As a key member of our leadership team, you will be responsible for overseeing the daily operations of our dining outlets, including a substantial banquet operation.
Key Responsibilities- Food Operations Management: Manage multiple dining outlets, ensuring seamless operations and exceptional guest experiences.
- Business Acumen: Demonstrate superior business skills, including managing and controlling costs, driving continuous improvement, and handling budget and Capex planning.
- Team Leadership: Lead staff management, focusing on training and development in modern culinary trends. Mentor and empower chefs to reach their highest potential.
- Culinary Innovation: Design modern menus while respecting traditional cuisine, continually striving to outshine the market.
- Food Safety: Maintain a sound knowledge of HACCP and food safety standards, ensuring compliance across all culinary operations.
- Minimum 5 years in a similar role within a comparable operation. Casino experience is highly regarded but not essential.
- A deep passion for modern menu design and a respect for traditional cuisine.
- Previous experience operating within a HACCP accredited environment.
- Familiarity with a wide range of cooking styles and ethnic cuisines.
- Strong computer skills, experience with procurement, costings, scheduling, and proficiency in Microsoft platforms.
