Role Summary:

We are seeking a Senior Culinary Expert to oversee kitchen operations, ensuring a safe and sanitary work environment for staff. This includes preparing or directing the preparation of meals in accordance with established guidelines.

Main Responsibilities:
  • Develop and implement regular and modified menus according to corporate standards
  • Adhere to standardized recipes, portioning, and presentation guidelines. Utilize daily production worksheets and waste log sheets effectively
  • Train kitchen staff in food preparation, handling, equipment operation, food safety, and sanitation based on Company and regulatory requirements
  • Maintain cleaning and maintenance schedules for equipment, storage, and work areas. Ensure kitchen staff adheres to and completes schedules as assigned
  • Manage inventory of food and non-food supplies within established parameters while ensuring necessary products are available when needed
  • Make decisions regarding leftover food product utilization, adhering to Company guidelines
  • Comply with federal, state, and local health and sanitation regulations and department procedures, as evidenced through local health department and third-party audits
  • Follow facility, department, and Company safety policies and procedures, including occurrence reporting
  • Participate in departmental meetings, staff development, and professional programs as appropriate
Key Qualifications:
  • Bachelor's degree or equivalent experience
  • Minimum of three to five years of progressive culinary/kitchen management experience, depending on formal degree or training
  • High volume, complex foodservice operations experience highly desirable
  • Institutional and batch cooking experiences essential
  • Hands-on chef experience mandatory
  • Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, cost controls, and presentation
  • Must be experienced with computers, including Microsoft Office (Word, Excel, PowerPoint), Outlook, email, and the Internet
  • ServSafe certification highly desirable
