About the Role

We are seeking a highly skilled and experienced Sous Chef to join our culinary team at JW Marriott Gold Coast Resort & Spa. As a key member of our kitchen leadership team, you will be responsible for overseeing the daily operations of our kitchen, ensuring the highest standards of quality, safety, and customer satisfaction.

Key Responsibilities
  • Manage kitchen shift operations, ensuring compliance with all Food & Beverage policies, standards, and procedures.
  • Estimate daily production needs and communicate production requirements to kitchen personnel.
  • Assist the Executive Chef with all kitchen operations and preparation.
  • Prepare and cook foods of all types, either on a regular basis or for special guests or functions.
  • Develop and implement new menu ideas, recipes, and presentation styles.
  • Lead and motivate kitchen staff to achieve exceptional customer service and quality standards.
  • Ensure compliance with food handling and sanitation standards, maintaining a clean and safe working environment.
  • Monitor and control food costs, inventory, and labor expenses.
  • Collaborate with the Executive Chef to develop and implement culinary strategies, menus, and promotions.
Requirements
  • 3+ years of experience in a Chef management position in a high-volume hotel environment.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to work under pressure and meet deadlines.
  • Strong knowledge of food safety, sanitation, and quality control procedures.
  • Ability to motivate and lead a team to achieve exceptional results.
