Job Title: Director Of Food

We are seeking an experienced and ambitious leader to join our team as a Director of Food & Beverage. This is a rare and exciting opportunity to manage multiple venues across the business, including bars, restaurants, and gaming operations.

The ideal candidate will have a strong background in hospitality management, with experience in building and growing gaming and hospitality venues to reach their full potential. They will be responsible for developing and implementing revenue-generating strategies, identifying and addressing operational improvements, establishing effective policies, and leading a high-performing team through strong, inspiring leadership.

Key Responsibilities:

  • Develop and execute strategic plans that drive venue success.
  • Manage the day-to-day operations, financial performance, and overall presentation of all venues.
  • Manage financial forecasting, budgeting, and cost control to ensure profitability.
  • Identify opportunities for operational improvement throughout all venues and implement effective, scalable solutions.
  • Oversee workforce planning including rostering, recruitment, and staffing requirements.
  • Inspire, lead, and develop a high-performing team culture, focused on excellence and accountability.
  • Ensure full compliance with all licensing obligations and industry legislation.

Qualifications:

  1. Minimum 5 years multi-venue, food and beverage senior management experience, including gaming.
  2. Current RSA, Gaming Licence, and RMLV Approved Manager accreditation.
  3. Proven experience in building and growing gaming and hospitality venues to reach their full potential.
  4. Ability to generate and implement revenue-building ideas throughout the venues.
  5. Strong staff management experience, with the ability to lead, develop, and motivate a high-performing team.
  6. Exceptional communication skills, both written and verbal.
  7. Strong time management skills.
  8. Tertiary qualification in Hospitality / Business Management (not essential but will be viewed favourably).
