Job Opportunity: Premium Beef Production

The opportunity exists for experienced professionals in boning and slicing, as well as those with skills in slaughtering.

About You
  • You must hold a Cert III in Boning, Slicing, and Slaughtering.
  • Produce quality standards of workmanship at all times.
  • Be physically capable of continuous standing and manual labor.
  • Follow instructions and procedures regarding food handling.
  • Display a commitment to safety awareness and adhere to all OH&S policies and procedures.
  • Ability to work early morning starts and overtime as required.

Key Responsibilities Include
  • Humanely stun livestock according to animal welfare and religious requirements.
  • Bleed livestock in accordance with company protocols.
  • Prepare carcasses for further processing by removing internal organs and hide.
  • Operate equipment to direct and drop carcasses and meat cuts from supply rails to boning tables.
  • Debone and slice primal beef cuts to meet company and export standards.
  • Separate meat, fat, and tissue from around bones.
  • Wash and trim foreign material and blood from meat.
  • Cut sides and quarters of meat into primal meat cuts such as rumps, flanks, and shoulders, while removing internal fat, blood clots, bruises, and other matter to prepare them for packing and export marketing.
  • Operate restraining and stunning equipment.
  • Sever jugular veins of stunned animals to drain blood and facilitate dressing.
  • Trim and remove head meat, then sever animal heads.
  • Eviscerate and trim animal carcasses.
