The ESS Defence organisation is seeking a skilled and experienced individual to join our hospitality and catering team. We deliver high-quality meals to our Defence personnel, whether in dining halls or on the field.

This unique role offers an opportunity to work in a dynamic environment with a dedicated team as a Chef, Cook or Apprentice Chef at our Defence Sites in Sydney Central.

Key responsibilities include preparing high-quality buffet-style meals for breakfast, lunch, dinner, desserts, and events; upholding catering standards; managing inventory; receiving supplies; monitoring cold room controls; and providing exceptional customer service.

We are looking for someone with a Certificate III in Commercial Cookery, a valid licence, and transport to access the site. Proven experience in large commercial kitchens, strong knowledge of HACCP, allergen management, and food safety, passion for quality with a focus on presentation and attention to detail, and a goal-oriented mindset with a commitment to personal and organisational success are essential.

Additionally, there are no late nights or split shifts, opportunities for growth and career development, on-site parking, uniforms provided, and meals during shifts. The company will cover the cost of an Australian national police check.
