Sous Chef Job Description

As the Sous Chef at a leading hotel, you will be second in command in a fast-paced kitchen environment, supporting the Executive Chef and guiding the kitchen team.

A little taste of your day-to-day includes:

  • Menu Development: Developing, updating, and implementing standard recipe cards and menus.
  • Kitchen Training: Preparing onboarding programs and providing training to kitchen staff.
  • Performance Management: Conducting performance reviews, probation meetings, and maintaining staff records.
  • Team Leadership: Leading, supporting, and communicating effectively with chefs, cooks, and stewards.
  • Food Safety: Ensuring compliance with food safety standards (HACCP).

You will also be responsible for:

  • Collaboration: Liaising daily with stewarding on equipment, sanitation, and cleanliness.
  • Health and Safety: Promoting and enforcing OH&S policies, hazard reporting, and corrective actions.
  • Training and Development: Appointing and supporting health & safety representatives, first aid officers, and fire wardens. Delivering induction and refresher safety training, including emergency procedures.
  • Guest Experience: Championing a positive guest culture through food quality, service, and presentation by designing guest-focused menus and organizing food & beverage activities.
  • Cost Control: Monitoring costs, budgets, and inventory while ensuring accurate recipe costings.
