Meat Production Specialist

We are seeking an experienced meat production specialist to join our team in Melbourne. As a skilled butcher, you will be responsible for preparing and cutting high-quality meat products for the wholesale market or smallgoods.

Key Responsibilities:

  • Operate and maintain butchering equipment, including knives, saws, grinders, and slicers, ensuring optimal performance and efficiency.
  • Select and prepare raw meat materials to produce premium cuts for the wholesale market or smallgoods.
  • Prepare meat for sale by removing bones, trimming fat, cutting, mincing, and grinding meat to meet display or customer requirements.
  • Ensure adherence to strict food safety and hygiene standards when handling and preparing meat products.
  • Develop and implement effective processes for value-adding, marinating, seasoning, and curing special cuts, as well as tasks such as cutting, trimming, and arranging meat for sale and supply.
  • Manufacture seasonings and pickles by blending spices, salt, and other ingredients.
  • Follow established occupational health and safety procedures to prevent accidents and injuries.
  • Operate sausage filling machines, smoking chambers, and cooking kettles and vats efficiently and safely.
  • Provide expert advice to customers on suitable meat cuts and estimate food production costs accurately.

Required Skills and Qualifications:

  • Bring strong knife skills and hands-on experience to this role.
  • Participate in job rotation and onsite training to enhance your skills and knowledge.
  • Work effectively in multiple processing areas, adapting to changing demands and priorities.
  • Demonstrate enthusiasm, self-motivation, and a commitment to teamwork and collaboration.
  • Model exceptional safety and wellbeing practices, setting a positive example for colleagues.
  • Possess butchering experience, with a Certificate III or IV in Meat Processing preferred but not essential.
