Job Role:

The Assistant Head Chef will be responsible for leading kitchen activities on shift and preparing our delicious food, contributing to memorable experiences for guests.

About the Position:

This role focuses on our restaurant, bars, and in-room dining operations. You will work collaboratively with the Executive Chef to ensure food quality, kitchen cleanliness, ordering, and people management are maintained at a high standard.

Your Responsibilities:

  1. Oversee daily kitchen tasks, plan, and assign work ensuring appropriate staffing numbers and labour costs are managed effectively
  2. Develop your team's skills and enhance their performance through coaching, feedback, and recognition
  3. Work with the Executive Chef to recommend or initiate any HR-related actions where needed regarding recruitment or performance management
  4. Promote teamwork and quality service through daily communication and coordination within and across other departments
  5. Maintain a strong visible presence in the kitchen to ensure product delivery meets quality and consistency standards
  6. Monitor competitor activity/industry innovation to develop new ideas in the kitchen
  7. Ensure all aspects of the kitchen environment are hygienic, HACCP compliant, and equipment is functioning properly
  8. Provide refresher training on the HACCP program as required

Your Requirements:

  • A Certificate IV in Commercial Cookery is essential
  • 5 years' experience working as a chef in either hotel or restaurant environments with at least 2 years' supervisory experience in kitchen operations
  • Experience working in a culinary environment servicing multiple outlets will be valuable, particularly exposure to an open kitchen environment
  • Holds a current food safety certification
  • Ability to inspire passion, enthusiasm, and positivity in the team to drive an engaged, winning culture
