We are seeking a highly skilled and experienced Sous Chef to join our culinary team at Catseye Pool Club, a premier dining destination on Hamilton Island.

Key Responsibilities
  • Assist the Head Chef in leading the kitchen and supporting service across all aspects
  • Oversee daily operations including mise en place, section management, and plating
  • Mentor and train junior chefs and kitchen staff to achieve exceptional standards
  • Ensure seafood preparation meets sustainability, quality, and consistency expectations
  • Implement and maintain kitchen compliance, food safety, hygiene, and allergen protocols
  • Collaborate with leadership to control costs, manage rosters, and optimize ordering
  • Foster a positive, professional, and inclusive kitchen culture that exceeds customer expectations

Requirements
  • Experience as a Sous Chef in a similar environment
  • Strong knowledge of seafood preparation, sustainability, and quality control
