HEAD CHEF WANTED | SURRY HILLS

Surly’s American Tavern – a local institution in the heart of Surry Hills – is looking for a Head Chef to take the reins of our fast-paced kitchen and help steer us into an exciting new era.

We’re a well-established, high-volume venue known for our American-style smoked BBQ, stacked burgers, and no-nonsense hospitality. With a dedicated smoker, a killer reputation, and big plans on the horizon, we’re after someone who knows how to lead from the front, inspire a team, and deliver consistently excellent food with flair and efficiency.

THE ROLE

Reporting to the Group GM, you’ll be responsible for:

- Running day-to-day kitchen operations and service
- Leading and mentoring a small but capable team
- Menu development, cost control, and GP optimisation
- Managing prep, service, and inventory with precision
- Ensuring food safety, cleanliness, and compliance at all times
- Playing a hands-on role in driving the next phase of Surly’s growth

YOU'LL NEED

- Minimum 5+ years’ experience in commercial kitchens, with at least 2 in a leadership role
- Strong working knowledge of BBQ, smoked meats, and American-style cuisine
- Excellent communication, leadership, and time management skills
- Solid understanding of food costs, COGs, and stock management
- Certificate IV in Commercial Cookery and Diploma of Hospitality Management
- Food Safety Supervisor certification
- A genuine passion for delivering great food and good vibes
