JOB DESCRIPTION | SUMMARY:
The Executive Chef Manager will oversee all aspects of Cleary University student dinning (Clancy's) and hospitality operations. Responsible for preparing daily food for student meal plan, including planning menus, purchasing ingredients, and utilizing and maintaining a commercial kitchen. In addition, responsible for food service for Cleary Commons special events, student-centered events, Cleary University events and external events on campus.
The Executive Chef Manager is under the supervision of the Director of Student Dinning and Hospitality, this position will create an exceptional dining experience by producing outstanding food in all areas of the Cleary University Food and Beverage operations.
JOB RESPONSIBILITIES:
Participate in and monitor the preparation and service of food to ensure consistent quality.
Maintain desired quality and quantity of food throughout the meal period.
Lead a high level of production output without compromising quality or customer service.
Plan, direct and coordinate production employees in order to prepare and deliver finished food product to students, staff and clients.
Collaborate with Director of Student Dinning and Hospitality to assist with building operations such as kitchen maintenance and repair, grounds, and regular upkeep of kitchen equipment and office equipment as needed.
Assist with purchasing and budgeting process to ensure food supplies and small wares are available for special events and kitchen courses as needed.
Actively represents the Cleary University to students, parents, professional organizations, articulation partners, business, industry and other relevant constituencies.
Participate in department meetings as assigned as well as department and personal professional growth activities.
Ensures appropriate sanitation standards and requirements are met.
Responsible for proper compliance with standards, procedures and specifications to ensure quality food presentation/appearance and desired portion control.
Assist with campus events and ensure a quality customer service experience for internal and external customers by interacting with customers, employees, guests, visitors.
Oversee ordering product for student dinning, special events and external events.
Will oversee quality and cost controls, develop recipes and menus, and manage inventories.
Ensure all food safety and sanitation procedures are followed and that a safe working environment always prevails, according to the Michigan health code regulations and internal standards. Monitor proper and safe use of all production equipment.
MINIMUM QUALIFICATIONS

Must demonstrate an understanding of university culture and a commitment to leading a student dinning commercial kitchen.
Bachelor's degree preferred from an institution recognized by the US Department of Education; five years professional experience and at least two years related experience and/or training; or equivalent combination of education and experience. Preferred: Professional Certifications.
Five to seven years of direct foodservice operational management experience with purchasing knowledge and control.
Strong knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
Strong supervisory, leadership, management and coaching skills. Strong communication skills, both written and verbal.
Ability to communicate on various levels to include management, client, customer and associate levels.
Proficient computer skills to include; various computer programs, Microsoft Office programs, e-mail and the Internet.
ServSafe Certified, Servsafe Allergen Certified
Physical Demands and Work Environment:
The employee must occasionally lift and/or move up to 50 pounds. Specific vision abilities required by this job include ability to adjust focus. While performing the duties of this job, the employee is regularly required to stand; use hands to finger, handle, or feel and talk and/or hear. The employee is frequently required to walk and reach with hands and arms. The employee is occasionally required to sit. The noise level in the work environment is usually moderate to high. Regular and predictable attendance is required.
