The 25hours Hotel The Olympia is the first 25hours in Australia, located in the vibrant suburb of Paddington in Sydney. The building was formerly a popular cinema, opened in 1911, reflecting its rich history throughout the guest experience.

The hotel features 109 rooms across six floors, event and meeting areas, an iconic London restaurant, The Palomar, a coffee house with Baker Bleu pastries, a cozy cocktail and wine bar, and a rooftop bar with city skyline views. The ground floor outlets are in collaboration with London-based creative hospitality studio, Studio Paskin. A new era begins at 25hours Hotel The Olympia, shaping and transforming Paddington with a vibrant, diverse team bringing its vision to life.

As Pastry Chef at The Palomar, you will lead all things sweet—crafting beautiful, bold desserts that reflect the fire, soul, and creativity of our kitchen. You will develop new ideas and execute them with precision, bringing joy to every plate and leaving guests with a lasting impression.   • Lead the pastry section from prep to service, ensuring high-quality desserts.
  • Design, develop, and refine dessert menus in collaboration with the Head Chef, incorporating seasonality, creativity, and balance.
  • Maintain standards in presentation, taste, and technique.
  • Oversee pastry mise en place and production schedules, ensuring efficiency and minimal waste.
  • Manage stock levels and ordering for pastry ingredients within budget.
  • Uphold food safety and hygiene standards in the pastry area.
  • Mentor and train junior team members, sharing knowledge and inspiring growth.
  • Collaborate with the kitchen team to ensure seamless service and a unified culinary offering.
  • Stay updated on trends and techniques to keep the pastry menu fresh and exciting.

Qualifications

We're looking for someone with both technical skill and creative spark:

  • Experience in a senior pastry role within high-end or high-volume kitchens.
  • Confidence in leading a pastry section independently and managing daily operations.
  • Deep understanding of classic techniques and a passion for modern flavors and presentation.
  • Detail-oriented, organized, and able to thrive under pressure.
  • Strong knowledge of food safety, allergens, and kitchen best practices.
  • Enjoys experimenting, learning, and delighting guests with innovative touches.
