Located on a 16 acre property with onsite boutique accommodation with views of the hinterland, Three Blue Ducks in Bellingen's unique site offers that classic Ducks' feel; real food, good company, stunning location.

We are looking for a switched on, driven, hardworking Head Chef to bring the food to life in our venue. The Head Chef will be responsible for the A La Carte, day-to-day events, corporate book-outs and weddings. They must champion local suppliers and produce, be creative with food while still managing their staff and kitchen operations accordingly.

They will inspire and motivate their kitchen team andensure every customer leaves with a smile on their face. They will be responsible for the food from conception through to execution, ensuring they are suitably organised, the team are working in unison and rostered appropriately, ordering and expenses are in line.

Key Responsibilities:

  • Oversee all kitchen operations, ensuring consistent quality and presentation.
  • Design and cost seasonal menus, banquet offerings, and daily specials.
  • Lead, train, and develop a high-performing kitchen team.
  • Manage food and labour costs to meet budget and business targets.
  • Ensure compliance with WHS, HACCP, and hygiene regulations.
  • Conduct regular stocktakes and maintain inventory levels.
  • Foster a collaborative and respectful work environment.
  • Promote sustainability practices in line with Three Blue Ducks' goals.

Qualifications & experience

  • Proven experience as a Head Chef
  • Strong ability in menu development and culinary innovation.
  • Strong leadership skills with the ability to motivate and mentor teams.
  • Solid understanding of menu design, food costing, and financial controls.
  • Excellent knowledge of food safety standards and WHS practices.
  • Creative and adaptable with a strong focus on quality and guest satisfaction.
  • Professional communication and time management skills.
  • Passion for sustainability and innovation in the kitchen.
