Eatons Hill Hotel Bistro & Bar offers a busy venue with a Restaurant, Gaming Lounge, Sports Bar, Beer Garden, Rooftop Bar, Concert / Grand Ballroom, Main Bar / Nightclub with TAB facilities and function space. The dining menu features modern pub cuisine with high-quality cuts from our own butchery, traditional Italian wood-fired pizzas, and a diverse international lineup curated by a team of professional chefs from around the world.
We're looking for a Restaurant Manager to lead the next phase of growth for this iconic hotel. With a strong local following and an outstanding fit-out, the venue offers something for everyone in town or while traveling. You will have the autonomy to implement your ideas within the hotel and draw on the diverse experience available across the group.

With autonomy for your own department, you will work closely with the Group's senior management to shape a dynamic culture aligned with strategic plans. You will be encouraged to identify areas for development and will drive team performance through budgets and plans that align with business objectives.
Key responsibilities- Hands-on leadership and accountability of your team, including supervision and performance evaluation
- Creating and maintaining an atmosphere where customer service standards thrive
- Driving sales to meet targets and budgets
- Product procurement and creating quality food and beverage offers
- Controlling operational costs
- Compliance with regulatory and company standards
- Participating in group management, marketing, and finance projects
- Strong planning and forecasting for local events and functions
This is a food and beverage focused venue, so we are looking for someone passionate about providing a high-level product with genuine friendly service and a minimum of 3 years in a similar role. The following skills are favorable:
Qualifications and experience- Sound Food & Beverage knowledge including cocktails & wine
- POS software experience
- Previous management experience
- Recruitment and retention of staff
- Training new staff
- Conflict resolution
- Knowledge of online bookings & ordering systems
- Ability to uphold and monitor Health and Safety in the venue
- Directing restaurant staff and communicating with the kitchen
- Setting the standard of service
- Overseeing opening and closing procedures
- Suitable experience in hotel hospitality and people management
- Strong understanding of the hotel/restaurant industry, market trends, customer service standards, and how to exceed them
- Ability to engage and build relationships with regular clientele
- Professional manner and presentation
- Availability weekdays, weekends and nights
- Lead from the front and set best examples
- Relevant certificates and licenses to apply
