Lake St Clair Lodge

  • is a small resort located in the heart of the Tasmanian Wilderness World Heritage Area. Offering 42 cabins, a restaurant, cafe, bar, and water ferry service on Australia's deepest lake. We offer a fully organic menu in our restaurant and cafe utilising fresh seasonal produce.

Co-located is Lake St Clair Tourist Park, which offers 28 hostel berths, 10 powered sites, and 25 unpowered sites.

The Position

We are seeking an enthusiastic and optimistic individual to join our kitchen team.

As a chef / cook, you will play an integral part of the kitchen team in the day-to-day operations. Being a seasonal business, the team is small during downturn but increases during season. You will be involved in designing menus, kitchen planning, purchasing, etc.

Responsibilities include:

  1. Lead by example in safe food handling, kitchen hygiene, and cleanliness.
  2. Assist in planning, budgeting, cost, and stock control.
  3. Adhere to company and regulatory food safety standards.

Competencies required:

  1. Examining foodstuffs to ensure quality.
  2. Regulating temperatures of ovens, grills, and other cooking equipment.
  3. Preparing and cooking food.
  4. Seasoning food during cooking.
  5. Portioning food, plating, and adding gravies, sauces, and garnishes.
  6. Storing food in temperature-controlled facilities.
  7. Preparing food to meet special dietary requirements.

As this is a small seasonal resort, assisting in other areas may be required from time to time.

Qualifications and experience:

  1. Completed apprenticeship or relevant certificates in cooking.
  2. Minimum Certificate III in Commercial Cookery.
  3. Preferably 5 years of experience as a cook/chef, especially in remote locations.
  4. Experience in restaurant environments, preferably fine dining.
  5. Good knowledge of kitchen operations, safe food handling, and OHS.
  6. Good personal hygiene.
  7. Hands-on management style.
  8. Trustworthy, honest, and ethical.
  9. Experience in both fine dining and cafe environments is essential.
  10. Interest in wellness, the natural environment, and healthy, wholesome food.
  11. Experience working in busy, fast-paced environments.
  12. Excellent communication skills.
  13. Team player.
  14. Ability to accept constructive criticism.
  15. Motivated to complete tasks successfully.
  16. Current National Police Check.
  17. Proficiency in English supporting visa requirements if applicable.

Regional Visa Sponsorship may be available for qualified candidates with adequate English skills and a valid 'Skills Assessment' from VetAssess.

Lake St Clair Lodge is located in central Tasmania, about 2 hours from Hobart. Situated on the shores of Australia's deepest lake within the Tasmanian Wilderness World Heritage Area, it is an ideal stop for travelers and weekend escapes. Due to the remote location, this role may not suit those with school-aged children. Having a personal vehicle is advantageous for living in this area.
