Position Overview

The Sous Chef will challenge expectations and introduce new ideas to deliver exceptional guest experiences. You will manage food production, maximize profitability, and ensure all food leaving the kitchen meets high standards.

Key responsibilities

• Ensure high-quality food production in the hotel's kitchens.
• Check quality and accuracy of deliveries.
• Maintain detailed food and menu knowledge and manage kitchen requirements accordingly.
• Supervise and ensure proper food preparation and rotation.
• Attend to guest needs promptly.
• Manage staffing rosters to ensure proper coverage.
• Prepare, cook, and serve food as required.
• Delegate duties to junior chefs.
• Coordinate with chefs for restaurant and banquet functions.
• Work with F & B Managers and outlet Supervisors for smooth operations.
• Follow standard recipes across outlets.
• Monitor stock rotation, ordering, and par levels to control food costs.
• Maintain a clean and safe working environment.
• Hire, train, and supervise kitchen staff.
• Ensure productive teamwork and harmony in the kitchen.

Responsible for: All chefs, kitchen hands, and stewards.

Maintain professional relationships with all departments and managers.

Experience and skills

Minimum of 2 years experience in a Japanese restaurant style, with skills in live fuel cooking and tempura.
