THE ROLE :

Reporting to the Executive Chef, as Sous Chef, you will help foster a motivated team to deliver high-quality Australian cuisine. Your responsibilities include:

  • Enhancing guest satisfaction by providing exceptional culinary experiences.
  • Encouraging innovation and pushing culinary boundaries.
  • Leading hands-on during all service periods and shifts.
  • Collaborating closely with the F&B Service leadership team.
  • Ensuring departmental training meets high standards.
  • Maintaining seamless communication with all hotel departments.
  • Overseeing health and safety procedures.
  • Contributing to seasonal menus, promotions, and events.
  • Partnering with the Executive Chef on budgeting, forecasting, and controls.
  • Supporting procurement, preparation, and presentation of dishes.
  • Championing food safety to meet regulatory standards.
  • Building an engaged team environment that attracts top culinary talent.

ABOUT YOU :

Your talents include:

  • Minimum Certificate 3 in Commercial Cookery.
  • Proven leadership in driving kitchen and floor teams to deliver award-winning cuisine.
  • Experience in controlling food and labour costs.
  • Strong communication and time management skills.
  • A visionary with high standards for guest service.
